For our final Alpes d’Or Christmas Cuisine Sessions we speak to Executive Chef of the Cork International Hotel Christopher O’Sullivan.
Hi Christopher, as we take part in our final Christmas Cuisine Sessions of 2020. Thank you very much for your time and we would like to wish you and all of the staff at The Cork International Hotel a very Merry Christmas and happy new year. Lets get a sense of Christmas at The Cork International Hotel.
What is your favorite thing about Christmas in The Cork International Hotel?
My favourite thing about working in the Cork International Hotel is my dedicated kitchen team. There is a great atmosphere in the kitchen at this time of year.
Do you have a culinary Christmas memory that stands out for you?
The earliest Christmas memory would be my mother over-cooking the Turkey
Can you give us 3 tips for creating the perfect Christmas Dinner?
- Don’t rush and put yourself under pressure.
- Don’t cook too much, make sure you have enough food to feed everyone around the dinner table.
- Have plenty of wine and chocolate
We at Alpes d’Or would completely agree with you on that last point Christopher!
What will you be serving yourself for Christmas Dinner this year?
This year, I will at my Brother’s house so all I have to do this year is to show up. It will be nice to have the dinner served this year as opposed to being under pressure to cook for my family.
For the adults, do you have a recommendation for a tipple that goes well with Christmas dinner?
I would suggest a bottle of Châteauneuf du Pape

Tell us about your typical Christmas day?
I look forward to the Christmas break every year and spending time with my daughter. It’s the one time of the year all the family are together enjoying the Christmas dinner.
What, in your opinion is the ultimate Christmas dessert?
The ultimate Christmas dessert would have to be Mississippi Mud Pie. It’s a chocolate lover’s delight!
What are you looking forward to most this Christmas?
I’m looking forward to spending time with my daughter and enjoying the festivities.
What is your favourite Christmas dish to compliment with luxury chocolate?
You can never go wrong with a warm Chocolate Brownie and a dollop of cream
Can you tell us of what changes will be coming to your menus and what new culinary things we can see coming from the Cork International in the new year?
We have some very exciting plans coming for 2021 at Cork International Hotel. We will be creating a completely new menu with local and seasonal produce.
